This is what Pinterest is for. For amazingly easy ideas that inspire you to actually go and do something. I think we are all a little guilty of pinning things that we want to do, but never actually think we will.

I first saw the cherry coke cupcakes all over Pinterest and, not particularly caring for the cherry part, decided to make my own with just coke. And surprise surprise, someone else (or, you know, 5,000 someone elses) had already done it. But whatever. I made these and I love them. They are simple to make and they turn out looking amazing. And there is no piping involved. Because that's an extra item to clean. And I'm not into that.
Start out with your fake batter: devils food mix + 1 can coke. No eggs, no oil, no water. Looks gross.
Looks better. Much better.
The batter is very dense, so resealable bags are best for filling the cups.
Only fill about halfway. These babies rise up big time.
When cupcakes are cooled, drizzle with your coke glaze: coke + confectioners' sugar.
This looks like it's done because I've already taken the paper off, but really, I took it off because I just wanted to eat it. Now.
If you feel like continuing to the next step (and I can't blame you if you just leave it here), they do get cuter.
Wait until the glaze has hardened and add a dollop of cream cheese frosting.
Add a coke candy and a straw and that's it!
And wasn't that worth the wait?
People ask: do these actually taste like coke? And I answer: do coke candies taste like coke? Close, but not exactly. These cupcakes are extremely similar in flavour to the coke candies. Which is, I guess, what happens when you have coke without the carbonation - you get delicious, sugary cola. Mmmmm, sugar.
The cream cheese frosting adds that little extra something that reminds you of a smooth, creamy coke float.
And the mini straws are just the cutest.

Ingredients
Coke Cupcakes
- 1 box devils food or chocolate cake mix (no additional ingredients)
- 1 can coke (about 1 1/2 cups)
- 1 tsp coke
- 3/4 cup confectioners' sugar
- 1/2 stick margarine* (1/4 cup) - room temperature
- 6 oz soy cream cheese* (3/4 cup) - room temperature
- 3 cups confectioners' sugar
- 2 tsp vanilla
- coke gummies
- straws, cut into 2" pieces
Preheat oven to 350F. Mix well coke and cake mix. Fill mini muffin cups halfway with batter. Bake 14-16 mins.
Mix 1 tsp coke with 3/4 cup confectioners sugar. Drizzle cooled cupcakes with glaze.
In stand mixer, cream margarine and cream cheese until smooth. Mix in vanilla. Slowly add confectioners sugar.
When glaze has hardened, add about a half teaspoon of frosting to each cupcake. Press down with a coke candy and insert straws if desired.
* Butter and Cream Cheese can be substituted for their dairy counterparts if desired.
** Makes about 4 dozen mini cupcakes
